The Zampone is a delicious cuts of pork.
The skin of the pork leg filled following the traditional recipe. This product comes on dinner tables to celebrate the New Year.
WAY OF COOCKING
You have to make a small cuts among the nails of the Zampone, then wrap it in a cotton cloth and bind it with string. Than you have to soak the Zampone into an oval pot with enough cold water to cover it and leave to stand for at least 4 hours.
Bring the water to boil, then lower the heat and continue to cook for at least 4 hours. It has to served hot.
